Researched from public sources.
Top Chef alum Bruce Kalman’s Arts District barbecue on South Main: brisket by the pound, house-made hot links, a patio smoker and live music.
Brisket by the half pound
SoulBelly BBQ sells its smoked meats the Texas way, by the half or full pound: beef brisket, bourbon-glazed pork steak, pork belly burnt ends, Carolina pulled pork, St. Louis ribs, smoked turkey and chicken, and house-made sausages like a Hatch chile and cheddar hot link. The smoker lives outside on the patio of the South Main Street restaurant, next door to HUDL Brewing and Nevada Brew Works.
Meats come with bread-and-butter pickles. Sides include mac and cheese under chicharron crumbs, Texas ranch beans, creamy coleslaw and cornbread with whipped honey butter. Smoked portobellos cover non-meat eaters; banana pudding closes the meal.
A pasta chef who switched to smoke
Bruce Kalman opened SoulBelly in the Arts District in May 2021 with business partner Richard Camarota. Before Las Vegas he cooked Italian food in Southern California as chef and co-owner of UNION in Pasadena and Knead & Co. Pasta Bar + Market in Grand Central Market. He was nominated for a James Beard Rising Star Chef award, won on Chopped, and finished in the top five of Top Chef’s 15th season. His turn to barbecue started when he helped Foo Fighters frontman Dave Grohl feed a crowd at a charity event. The restaurant calls its style chef-driven regional barbecue with a central Texas lean.
Music and a cold lager
Friday and Saturday evenings often bring local bands and acoustic acts, and the Las Vegas Blues Society holds its all-ages Second Saturday blues jam here each month. The bar area has a weekday afternoon happy hour, and the house Jiggly Lager comes in 16-ounce cans. SoulBelly also hosts parties, caters, and ships barbecue nationwide through Goldbelly.
