Rang’s Cocina Moderne

Crab fat in pasta, a citrus-soy glaze on steak and Galician sauce with octopus give an immediate sense of Rang's Cocina Moderne. The West Charleston restaurant brings Spanish and Italian dishes into conversation with Asian flavors, particularly the Filipino background of chef Rachelle “Rang” Tan.

Rachelle and her husband Benedict Tan run the family-owned business. The restaurant marked its third anniversary in 2026, tracing its opening to 2023. Review-Journal magazine coverage identifies both owners and describes the chef's combination of culinary influences.

What the combinations look like

• Bistek pairs a New York strip steak with onions and a citrus-soy glaze.
• Aligue pasta uses crab fat, garlic and shrimp.

The current favorites list also includes a three-cheese garlic salmon, truffled mushroom and asparagus pasta, slow-braised beef cheek and Chilean sea bass with a coconut sauce. These are specific examples of the restaurant's approach, rather than a menu divided into separate national cuisines.

A family restaurant after dark

Rang's serves dinner from its Charleston Boulevard dining room. The current website lists Tuesday through Sunday evening service and asks parties of twelve or more to telephone about reservations.

The kitchen has also participated in Las Vegas Restaurant Week. Its 2026 anniversary announcement described a menu supporting Three Square, placing the independent restaurant within a wider local dining fundraiser. That was a dated event, separate from the current dinner menu.

House-made focaccia, pasta dishes and desserts such as tiramisu appear in the restaurant's published account of its cooking. Together with the Filipino-inflected favorites, they explain the breadth of a small family operation whose menu follows the chef's own cross-cultural interests.
