Vanilla Rice Hibachi

Vanilla Rice Hibachi takes what comes off a hibachi grill, fried rice, grilled vegetables and chicken, steak, shrimp or lobster, and serves it as bowls and plates to pick up, have delivered or eat at a table. There is no booking a seat at a shared grill and no hour-long wait for the show.

Dishwasher to owner

Founder and owner Zach Tolen started washing dishes at 15, alongside his younger brother. A manager's line that dishwashers don't get raises stuck with him; in 2025 he said it would be the title of his book. He later worked the hibachi grill himself, and guests started asking for him to cook their meals. Vanilla Rice is his own nickname. He launched the business in 2020 out of a backyard, on maxed-out credit cards and with ingredients kept in refrigerators around town, then ran a food truck before opening a storefront on East Flamingo Road. A second shop on West Charleston Boulevard came next.

What to order

• Chicken and shrimp, steak, or steak and shrimp bowls
• Chicken and steak combo, or lobster with steak
• A hibachi chicken burrito
• Party trays for groups

Bowls come with fried rice. Sauces are yum yum, a spicier yum yum, ginger and teriyaki.

Two shops: East Flamingo Road is takeout and delivery only; West Charleston Boulevard has dine-in seating and room for groups. Both are open noon to midnight daily, and orders also go through the website and the Vanilla Rice app.

Hibachi at your party

The catering side sends private hibachi chefs to homes and events around the valley and also puts together party platters and corporate catering. Catering calls are taken from 10 a.m. to 10 p.m.

Tolen also hosts Rich Off Food, a podcast he started in 2024 about food and building a business.
