Liam Dwyer's downtown kitchen and bar at Carson and Seventh since 2017: brunch from 9 a.m., wood-fired flatbreads, two patios and group dining.
Liam Dwyer spent years as a director of operations for the former Light Group before opening his own place downtown. In June 2017 he took over the old Glutton space at Carson Avenue and Seventh Street, painted it red and named it after the corner. The Review-Journal covered the opening, and the restaurant still marks 2017 as its start.
A downtown corner with two patios
7th & Carson calls itself a downtown kitchen and bar. There is an exhibition kitchen with a wood-fire oven, a dining room, an outdoor garden patio and a sidewalk cafe with a view of the city. It opens at 9 a.m. every day and serves brunch, lunch and dinner.
In spring 2020, when dining rooms were shut, the City of Las Vegas featured the restaurant in its Business Protection Program. Dwyer worked with city licensing staff to reopen for a while as a corner market selling groceries, wine, packaged liquor and favorites from the menu. The city's post also noted recognition from the Nevada Restaurant Association and Forbes; the restaurant's site lists the association's 2018 Restaurant of the Year honor.

The restaurant hosts reception-style and seated events, with pre-set group menus that start with wood-fired bread and dips and move on to dishes like beer-braised short rib and pan-roasted chicken. Dwyer handles group bookings himself. Tables can be reserved through OpenTable.
