Bakery, Las Vegas / Las Vegas Valley

Kimmie and Josh McIntosh’s Filipino-inspired Las Vegas pop-up connects inventive baking with community fundraisers.

Coconut mochi fritters and longganisa cheddar biscuits tell part of the story at MILKFISH Bakeshop. Kimmie McIntosh uses the Las Vegas pop-up to explore Filipino ingredients and recipes, working alongside her husband, Josh. The menu can change with the collaboration, giving her room to try a different idea at each host venue.

From a bake sale to MILKFISH

The business grew out of virtual bake sales during the 2020 pandemic. McIntosh became involved with Bakers Against Racism while reconsidering her return to restaurant work. Baking offered a way to raise money for nonprofit organizations, and those sales developed into the pop-up she now runs.

Her route to pastry included culinary school in Santa Barbara, kitchen work, and a move into restaurant management in the Bay Area. She and Josh relocated to his hometown of Las Vegas in late 2013. Before building MILKFISH, she also worked at the Las Vegas Milk Bar, moving from counter service into management.

Filipino flavors, changing settings

City Cast’s August 2026 profile described her interpretation of karioka as coconut mochi fritters finished with caramelized coconut and sea salt. Another creation folds sweet, garlicky longganisa into cheddar drop biscuits. These are examples of the bakery’s approach, with each pop-up’s announcement setting the actual menu.

Fundraising remains part of that work. Collaborations with Fukuburger and TSP Baking Company have supported FEAT and The Center, respectively. McIntosh asks collaborating businesses which organizations matter to them, then works that cause into the event.

The James Beard Foundation named Kimmie and Josh semifinalists in 2024; Kimmie received another semifinalist nomination in 2026. MILKFISH continues to operate through pop-ups rather than a permanent walk-in bakery. Its Instagram announcements are the practical place to find the next location and ordering details.
