Las Vegas pastry chef Andrea McLean makes preorder pies, pop-up slices and event desserts through Pop N Pies.
Andrea McLean traded the pastry kitchens of Strip restaurants for a pie business of her own. The Las Vegas native earned a culinary arts degree at the College of Southern Nevada, then worked at Bouchon and Joël Robuchon. In 2020, she started Pop N Pies to keep baking during the pandemic.
A pie business built around preorders
Pop N Pies works from a shared commissary kitchen, with whole pies made for scheduled pickup or delivery. It does not operate a walk-in storefront. Online preorders are the main ordering route, and McLean also accepts inquiries by text or phone. Service is available across the week when the production and delivery schedule allows.
The kitchen’s small scale shapes how customers buy. There is no counter stocked with ready-to-go slices at the commissary. Slices are instead part of the pop-up format and selected restaurant partnerships. The business’s FAQ points customers toward Antidote for a small selection including chocolate coconut and banana cream pies, and Earthly Plant Based Eatery for vegan slices.
Restaurant technique, familiar desserts
McLean developed the business through the local pop-up scene, including Vegas Test Kitchen. Eater’s 2021 profile traced how she brought experience from restaurant pastry work into this independent operation. As orders grew, she chose to concentrate on Pop N Pies instead of returning to her previous restaurant job.
The business also handles catering inquiries, including desserts for larger gatherings. Custom vegan and gluten-free pies can be discussed directly with the baker; those requests need an order conversation rather than an assumption about a standard menu item.
For customers, planning ahead is part of the process: choose from the current ordering menu, arrange the date, and confirm pickup or delivery. McLean’s website recommends texting for the quickest response when an order needs a specific answer.
