Family-owned Italian restaurant and wine bar at Rampart and Lake Mead, opened in 2021 by Valentino alums German Castellanos and Alessandro Stoppa.
At the corner of Lake Mead and Rampart, two minutes off Summerlin Parkway, Aromi took over the 2,200-square-foot storefront that used to be Nittaya’s Secret Kitchen and opened there in 2021. It is a small, family-owned Italian restaurant and wine bar run by German Castellanos and Alessandro Stoppa, two chefs who first worked together at Valentino in the Venetian.
From dishwasher to chef de cuisine
Castellanos, the executive chef and founder, grew up in Honduras and came to the United States planning to stay three years and save for DJ equipment. His first job was washing dishes at Santo Pietro in Bel Air, and he worked unpaid on his days off to learn to cook. After Joachim Splichal’s Pinot Hollywood and Canyon Bistro, he spent 1995 to 2000 at Posto in Los Angeles under Luciano Pellegrini and Piero Selvaggio, finishing as head chef. His mentors then brought him to Las Vegas to open Valentino, where he was chef de cuisine for its 12-year run, followed by Fiamma at MGM Grand and Casanova at the Venetian.
Stoppa, his partner, has an Italian background and cooked in Europe in a Michelin-starred restaurant and five-star hotels. The two started Vanilla and Pepper Catering in 2016, with clients that included Tiffany and Dior on the Strip, before opening the restaurant.
What to order
The menu moves through antipasti and salads, pasta and risotto, and meat and fish, with daily specials and chef’s tastings. Gluten-free, vegan and vegetarian options are always on hand. When Las Vegas Weekly reviewed Aromi in 2022, the best-sellers were:
- Classic lasagna with béchamel and meat sauce
- Spaghetti Neri, squid-ink pasta in arrabbiata with scallops and lobster
- Wild mushroom ravioli with braised beef short rib
- Thyme-crusted New Zealand lamb chops
- A lightly spicy cioppino with clams, scallops, mussels, calamari, lobster and branzino
Thin, crisp pizzas are takeout only, ordered by call or text: margherita, pepperoni and sausage, porchetta with caramelized onions and truffle oil, and prosciutto San Daniele with arugula.
Hours: Monday through Friday, 5 to 9 p.m.; Saturday and Sunday, 11:30 a.m. to 9 p.m., with lunch until 3 p.m. Happy hour is at the bar only and skips holidays.
Reservations can be texted with name, date, time and party size. On weekends and holidays, parties of five or more are seated once everyone has arrived.
