Siblings Amanda and Matt Payan converted their family’s North Las Vegas restoration warehouse into North 5th Brewing Co.
Before it held a brewery, the building at 60 West Mayflower Avenue held Amanda and Matt Payan’s family restoration business. The siblings saw warehouses being used as breweries while traveling and brought the idea back to North Las Vegas. North 5th Brewing Co. opened in December 2021 in the converted space.
Las Vegas Weekly documented that transition, including the family’s decision to put a taproom and brewing operation into a building they already knew. The location is north of Lake Mead Boulevard, in a working part of the city rather than the downtown Las Vegas brewery cluster.
A family project with local help
The Nevada Small Business Development Center featured Amanda’s work on the business in its 2022 annual report. Its account describes assistance with financing for brewing equipment and a review of the company’s online presence. That is a concrete part of how the warehouse project became an operating brewery.
Behind the taps
The brewery’s current team page names Amanda and Matt as owners, Patrick Tofte as head brewer and Sam as assistant brewer. Opening coverage identified Patrick and Sam as brothers, making brewing another family connection within the operation.
The original beer lineup included an imperial stout, a hazy IPA, a West Coast IPA, a session IPA, a Mexican lager and an amber lager. Those opening beers show the range the team set out to make; the brewery’s current beer list is the reference for what is pouring now.
North 5th’s website maintains separate listings for events, food trucks and private events. Those offerings make the Mayflower Avenue taproom a place to plan an evening or a gathering, as well as try the beer.
