MG Patisserie and Café

Michael Gillet’s route to a neighborhood pastry counter began in Burgundy. Born in Nevers, the chef discovered baking at his grandmother’s home in Nannay, then completed culinary and pastry training and an apprenticeship in La Charité-sur-Loire. MG Patisserie and Café brings that background to South Rainbow Boulevard.

Before starting the business in 2019, Gillet worked in major restaurant and hotel kitchens. His career includes Le Cirque in New York and pastry programs developed with José Andrés for SLS, Tres and the Bazaar. In Las Vegas, he worked on dessert programs for the flagship restaurants of Giada De Laurentiis and Guy Fieri.

Inside the pastry case

The menu lists almond and chocolate croissants, macarons, fruit tarts, cheesecake and tiramisu. Coconut and passion fruit appear in one of the composed tarts. These are individual pastries and desserts, alongside the cakes that have helped earn the bakery attention in Eater’s Las Vegas bakery coverage.

Breakfast has a savory side

Ham-and-cheese quiche and salads round out the café offerings. The savory choices make the Rainbow Boulevard shop a breakfast or lunch stop as well as a place to pick up something sweet.

The business says it selects sustainable and organic ingredients when possible, a stated purchasing approach rather than an across-the-board certification claim. Its own menu is the best reference for the current pastry selection; the chef’s history explains the combination of classical French baking, restaurant desserts and a smaller café setting.
