Chef Kaoru Azeuchi’s Spring Mountain restaurant offers seasonal kaiseki, beef kappo and sushi omakase experiences.
Seasonality determines the progression of a meal at Kaiseki Yuzu. Chef Kaoru Azeuchi’s restaurant on Spring Mountain Road presents Japanese cooking through a sequence of courses, with attention to the relationship between ingredients, texture and presentation. Its current format offers three distinct experiences at the same address.
Choose the counter and the meal
- Kaiseki: a seasonal progression rooted in the Japanese multi-course tradition that shaped Azeuchi’s career.
- Beef kappo: a counter-side tasting centered on beef, with preparation taking place close to the diners.
- Sushi omakase: Chef Jon’s sequence of nigiri and seasonal preparations, using fish the restaurant says is flown in overnight from Japan.
Visit Las Vegas has featured Yuzu in its guide to chef counters, describing the changing seasonal menu and separate dining spaces. The setting makes the preparation and pacing of the meal part of the visit, rather than presenting one broad à la carte menu for every diner.
The chef’s preparation
After culinary school, Azeuchi spent sixteen years studying and practicing kaiseki in Japan. He became sous-chef at Hotel Nogamiya at twenty-seven and later head chef of a tofu kaiseki restaurant in Tokushima. His training also included three years working with French technique.
The restaurant’s account of his career includes a first prize in the Tokushima Culinary Contest and preparing a meal for then-Crown Prince Naruhito during a visit to Kagawa Prefecture. Those experiences preceded his move to Las Vegas and the opening of his own restaurant.
Yuzu currently publishes two evening seatings, Thursday through Monday. Because the three experiences have separate menus, guests should select the intended meal when making arrangements. The seasonal approach also means a dish described in an older review may not be part of the next dinner.
