Start with the buttercream

Ask what Rolling in Dough is known for and the bakery will point you to its Italian buttercream, whipped fresh in house along with the fillings and frostings. The cakes themselves are baked every day. Everything is made in the licensed, inspected storefront on West Charleston Boulevard, out toward Summerlin.

Alexis Pascual owns the bakery, which BBB records show was started in February 2018. The shop describes itself as owned and operated by women from all over the world, with bakers, pastry chefs and cake artists on staff. Alexis has also been quoted by WeddingWire on wedding cake trends, including trio cakes: three single-tier cakes that are easier to transport and store than one tall cake.

Customers can send a sketch or inspiration photos, or choose a chef's-choice order, where you give three guidelines and the decorators take it from there.

Before you order

Plan on one to two weeks for a custom cake and several months for a wedding. March through May and September through December are the busiest stretches, so same-day custom work is not always possible then. There are ready-made cakes in the case every day, though. Delivery is charged by the mile in a refrigerated van, and the bakery suggests it for cakes of three or more tiers or during the hot months. Orders can't be cancelled, but a cake can be moved to another date or turned into bakery credit within six months.

Hours: Monday to Saturday, 11 AM to 6 PM. Closed Sunday.
