Buckwheat, butter and Brittany

Breizh is the Breton name for Brittany, the corner of northwest France where Cafe Breizh's founders, Pierre Gatel and Jerome Marchand, were born and raised. They became friends as apprentices early in their culinary training and opened the cafe on South Fort Apache Road in December 2016. Gatel, formerly executive pastry chef at Wynn Las Vegas, comes from a line of bakers: his father and grandfather both baked in France, and their portraits hang in the cafe.

Everything is made from scratch and baked on site. The kitchen turns out around 120 baguettes a day, and they often sell out by early afternoon, so bread buyers should come early. Gatel's advice is to buy a baguette on the day you plan to eat it. Rustic loaves, an epi and kouign-amann, the caramelized Breton pastry, round out the bread side. The bread is made with King Arthur flour from Vermont, and when the cafe opened, the buckwheat flour for its galettes came straight from Brittany.

• Galettes: savory buckwheat crepes in the Breton tradition, from La Tradition to La Tartiflette and La Norvegienne
• Sweet crepes: lemon sugar, Nutella, very berry and the house Breizh
• Viennoiserie: croissants, pain au chocolat, almond croissants and apple turnovers
• Pastry: eclairs, Paris-Brest, tropezienne, Napoleon and fruit and lemon tarts
• Breakfast and lunch: quiche Lorraine, croque monsieur and croque madame, Nicoise salad and a soup of the week

Coffee comes from La Colombe, draft latte included. The cafe also takes custom cake orders and online orders for pick-up.

Hours at Spring Mountain (Fort Apache): Monday to Thursday 7 a.m. to 5 p.m.; Friday to Sunday 7 a.m. to 6 p.m.
Hours at Henderson (Eastern Avenue): daily, 7 a.m. to 4 p.m.
