Nittaya’s Secret Kitchen

Restaurant, Las Vegas / Las Vegas Valley

Listed Researched from public sources.

Thai small plates and family recipes on West Lake Mead Boulevard: E-Saan sausage, kao-soi, curries, whole fish, Harney teas and a wine list.

Nittaya's Secret Kitchen serves Thai food the way a tapas bar would: a long run of small plates to share, then curries, noodles and whole fish for the table. The recipes are Nittaya Parawong's secret family dishes from her homeland of Thailand, made from scratch every day at her restaurant on West Lake Mead Boulevard, which the restaurant calls its Summerlin location.

Start with small plates

The tapas list has dozens of choices. Some are familiar, like chicken satay and curry puffs. Others lean regional: E-Saan sausage hand-stuffed with pork, lemongrass and peanuts, or son-in-law eggs, which are hard-boiled, deep-fried and glazed with tamarind. There are tod mun fish patties with cucumber salad, Siamese corn fritters, crispy garlic spareribs, grilled pork shoulder, and a tempura spinach salad with cashews and ground chicken that the menu calls Nittaya's original.

For the table

  • Kao-soi, northern Thai curry noodles, with slow-cooked pork shoulder, beef rib or grilled steak
  • Curries that range from massaman lamb shank and duck breast with pineapple to a coconut seafood curry
  • Deep-fried whole branzino with tamarind sauce, and Thai barbecue Cornish game hen
  • Drunken noodles, home-style shrimp pad thai and Crying Tiger rib-eye
  • A vegetarian section, the Secret Garden, with tofu massaman, eggplant panang and spicy basil tofu

Tea, wine and dessert

Hot teas come from Harney & Sons, from Japanese sencha to jasmine and caffeine-free herbals. The wine list pours whites and reds by the glass, including several Rieslings, an Austrian Grüner Veltliner and a Chablis, and corkage is allowed for bottles not already on the list. Desserts, listed as Happy Endings, include house-made coconut ice cream, Thai donuts with coconut rum caramel sauce, mango with sweet coconut rice in season, and a crème brûlée flavored with ginger, green tea and coconut.

Hours: Monday to Saturday, 11 a.m. to 10 p.m.; Sunday, 11 a.m. to 9:30 p.m. Happy hour runs Monday to Thursday, 3 to 6 p.m., at the bar only. Call for reservations; online ordering is available.
