Nectaly Mendoza's West Sahara steakhouse and classic-cocktail bar, open since 2009 until 3 a.m., with a drinks list arranged by era.
Nectaly Mendoza opened Herbs & Rye in December 2009, in the middle of the recession, on a stretch of West Sahara Avenue lined with car dealerships. The Las Vegas native had spent nearly a decade as a barback and beverage specialist in Light Group bars and restaurants, and he wanted a place where people coming off a Strip shift could get a proper drink and a steak late at night. For the first few years business was thin. Word spread through the service industry first; families and people in suits came later.
A cocktail list arranged by history
The drinks menu is a long, multipage book divided into eras, from the Gothic Age after American independence through the Tiki Boom to today's Revival. Mendoza has said he keeps cocktail prices well under Strip levels on purpose. The red velvet wallpaper and old-Vegas look come from his own childhood, when his father drove the family to the Strip for cheap buffet dinners.
The bar has collected a shelf of honors. Nightclub & Bar named Mendoza Bartender of the Year in 2016, and that July Tales of the Cocktail gave Herbs & Rye its Spirited Award for Best American High-Volume Cocktail Bar. In 2025 VinePair named it Industry Icon of the Year in its Next Wave Awards.
The steakhouse side
- Steaks from an 8-ounce flat iron and filet to a 16-ounce ribeye, with sauces like Peruvian chimichurri, bearnaise and brandy peppercorn
- Nectaly's Surf & Turf: a 16-ounce ribeye with two lobster tails
- House-made pastas, including short rib agnolotti, lobster pappardelle and cacio e pepe
- Starters such as beef tartare, filet sliders and littleneck clams
- Sweet potato tots and jalapeño creamed corn on the side
Items marked on the menu carry a discounted price; VinePair describes the steak deals as deep happy-hour discounts. Since 2015 the bar has also hosted BarMania, a wrestling-themed speed-bartending contest that raises money for childhood cancer research. Mendoza's second restaurant, Cleaver, is a larger steakhouse on Paradise Road.
Hours: Monday to Saturday, 5 p.m. to 3 a.m.
