Cleaver

Restaurant, Las Vegas

Listed Researched from public sources.

Nectaly Mendoza's Paradise Road steakhouse, sister to Herbs & Rye: cuts up to a 64-ounce ribeye, a raw bar and era-sorted cocktails, nightly 5 to midnight.

The biggest steak at Cleaver is a 64-ounce ribeye. Below it on the menu come a 54-ounce tomahawk, a 32-ounce porterhouse for two, and the usual filet, New York strip and chops, each with add-ons like a blue cheese crust, Oscar-style crab and bearnaise, or the house Cleaver Style of spice rub, blue cheese, fried egg and thick bacon.

Sisters, not twins

Cleaver comes from Nectaly Mendoza, who opened the late-night cocktail bar Herbs & Rye on West Sahara in 2009. The restaurant's own FAQ explains the difference: Herbs & Rye is the cozy, bar-first original, while Cleaver aims to be a more open, well-rounded dining room, with higher-grade cuts, finer spirits and a longer menu. Back in 2018, while it was still being planned, SevenFifty Daily described it as a 7,000-square-foot steakhouse near the convention center. The dining room is hung with classic portraits of famous faces, and the restaurant says it was founded, and is still run, on a few longtime friendships. Mendoza's group has since added Morning News and Middle Child, and Las Vegas Weekly calls Cleaver the family's steakhouse.

Beyond the beef

  • Bone marrow with blueberry demi-glace
  • A raw bar with oysters, king crab legs and a chilled seafood platter
  • Oyster shooters in a blood orange Bloody Mary
  • Braised short rib, cherry lamb chops and seared sea bass
  • Sides such as pork belly mac and cheese and street corn

Like its sister bar, Cleaver sorts its cocktails by era, from the European drinks of 1910 to 1935 through the tiki years to the modern classics of the Dale DeGroff era. Some dishes carry a lower happy-hour price on the menu. There are several dining spaces and private rooms for parties, from retirement dinners to Sweet 16s.

Hours: Daily, 5 p.m. to midnight; last seating at 11 p.m. Closed most major holidays. Parking is in front and back.
