Ron and Jeannette Lutz: From the Strip to Three Valley Locations

Ron Lutz started cutting meat right out of high school in 1987, working his way through Lucky’s, Smith’s, and Albertsons before landing as head butcher at Treasure Island Hotel Casino in 1993. For fifteen years on the Strip, Lutz oversaw all meat sourcing, buying, and processing for TI’s restaurants and banquets — a volume operation that gave him a comprehensive education in every grade, cut, and supplier relationship the industry offers. When Ron and his wife Jeannette decided to open their own shop, they brought that institutional knowledge to the retail side and built The Butcher Block into one of the most respected independent meat markets in Southern Nevada. The flagship location at 7965 South Rainbow Boulevard in the Southwest valley opened first, followed by shops in Henderson and Centennial Hills, giving the Lutz family a presence across three of the valley’s most active residential corridors. Each location carries Choice, Prime, Wagyu, Kobe, dry-aged beef, veal, lamb, pork, poultry, and a seafood case — the kind of range that a grocery store meat department cannot match and that most specialty shops do not attempt.

The Butcher Block operates as a traditional full-service meat market, meaning customers can request custom cuts, special orders, and preparation advice directly from the butchers working the counter. The shops also carry house-made sausages, marinated proteins ready for the grill, and seasonal specialty items that rotate throughout the year. Ron’s Strip background shows in the sourcing: the relationships he built supplying a major casino property give The Butcher Block access to the same quality grades that high-end restaurant kitchens demand. During the COVID-19 pandemic, the shop was featured on 8 News Now as valley residents turned to independent butchers when grocery chain meat departments could not keep shelves stocked — a moment that underscored the value of having a locally owned, locally sourced alternative to the supermarket supply chain.
