A retired chef's edge
Sharpen Vegas is a locally owned knife sharpening business run by Jason Hoatson, who lives on the east side of Las Vegas. Its owner spent more than 30 years as a professional chef, working in restaurants and owning them. After leaving the restaurant business in 2017 he kept sharpening part-time for friends, colleagues and local kitchens, and in 2021 he made it a full-time mobile service.
He approaches a blade the way a cook does: the goal is performance, edge retention and safety, not a shiny finish, and a bargain knife gets the same standard as an expensive one. The aim is to bring kitchen and everyday knives back to a consistent, like-new edge.

A set day for each part of town
Rather than leaving knives at a shop for a week, customers book a slot on the day the route reaches their area. Henderson, Green Valley, Anthem and Boulder City are Tuesday stops, Summerlin is Friday, Southern Highlands and Mountain's Edge are Saturday, and North Las Vegas, Centennial Hills, Downtown and East Las Vegas are spread through the middle of the week. Booking works as a guest or with a free account, and payment can be cash, Zelle, Venmo or card.
The business also sells knives and everyday-carry bags, and it sets up at Las Vegas-area gun shows, where people can have blades sharpened while they browse. Custom laser engraving was added in 2023.
