A Culinary Lineage

Girair “Jerry” Goumroian grew up watching his father run a Greek restaurant, carrying forward a family trade that began with grandfathers born in Greece. That kitchen education led Goumroian to the Culinary Institute of America in Hyde Park, New York, where he trained alongside future chefs who would scatter across the country’s top kitchens. He competed in the Culinary Olympics, testing his technique against international teams, then returned to Las Vegas — a city where Mediterranean food was largely limited to strip-mall gyro counters and hotel buffet stations.

Meraki Greek Grill opened in 2017 at the corner of Rainbow Boulevard and Tropicana Avenue in Spring Valley. The name comes from the Greek word meraki, meaning to do something with soul and creativity. Goumroian built the menu around dishes he had eaten his entire life — lamb, chicken, and pork grilled over open flame, house-made tzatziki, hand-stretched pita — but plated with the precision of a classically trained chef. Executive chef and partner Nikos Georgousis shares culinary leadership, bringing his own Greek heritage into daily menu development.

Five Locations Across the Valley

Meraki Greek Grill now operates five locations: the original Rainbow and Tropicana restaurant, a Charleston and Fort Apache outpost, a Blue Diamond and Buffalo location, a Centennial Hills store in the northwest valley, and a Henderson location serving the Green Valley corridor. The flagship on Rainbow holds more than 1,194 reviews on Yelp, and the brand was named to Yelp’s Top 100 Places to Eat in the entire United States — a list that draws from millions of reviewed restaurants nationwide.

Goumroian was recognized in the Vegas Inc 40 Under 40 class of 2025, a distinction shared with founders, executives, and civic leaders across Southern Nevada. Meraki Greek Grill has maintained a fast-casual format throughout its expansion: counter ordering, open kitchens, and a tight menu that avoids the sprawl typical of Mediterranean restaurants trying to be everything at once.

Meraki Greek Grill in the Las Vegas Valley

Meraki Greek Grill has built a partnership with Hope For The City, a Las Vegas nonprofit addressing child hunger and food insecurity in Clark County. The restaurant participates in meal programs and fundraising events tied to the organization’s year-round operations. With five locations now spanning Las Vegas, Henderson, and the northwest valley, Meraki Greek Grill has become one of the most visible locally owned restaurant brands in the metro area — competing not with other Greek restaurants but with the national fast-casual chains that dominate valley retail corridors.
