Three Generations Since 1959
Milton and Esther Freed opened Freed’s Bakery in 1959, when Las Vegas was a desert city of roughly 65,000 people and the Strip was a two-lane highway lined with a handful of casinos. The bakery started as a neighborhood operation — birthday cakes, pastries, and bread for the families who were building the residential neighborhoods east of downtown. Milton ran the business while Esther worked the counter, and the operation grew alongside the city itself. By the time their son took over, Freed’s Bakery had become one of the most recognized names in Las Vegas baking. Today, third-generation owner Max Freed runs the company, maintaining the recipes and production standards his grandparents established more than six decades ago.
Freed’s Bakery gained national visibility through two seasons of Food Network’s Vegas Cakes, a series that followed the bakery’s team as they built elaborate custom cakes for Las Vegas events, weddings, and casino clients. The show introduced Freed’s to a national audience, but locals had known for years what the cameras confirmed: the bakery produces some of the most technically accomplished cake work in the Southwest. Freed’s Bakery now operates five retail locations across the Las Vegas Valley, with additional stands at T-Mobile Arena and Allegiant Stadium — placing the brand inside the two venues where Las Vegas gathers for its biggest events.
The Flagship on Eastern Avenue
The Freed’s Bakery flagship location at 9815 S Eastern Avenue anchors the company’s retail and production operation. The Eastern Avenue shop handles the bulk of custom orders — wedding cakes, corporate events, and the specialty designs that built the bakery’s reputation — while the satellite locations in Henderson, Summerlin, and across the valley serve the daily retail traffic. Freed’s Bakery has built a substantial following on Instagram, where more than 84,000 followers track the bakery’s custom work and seasonal releases.
Freed’s Bakery in the Las Vegas Valley
Las Vegas has no shortage of bakeries, but Freed’s occupies a category that no competitor can replicate: institutional memory. The bakery has been making cakes for Las Vegas families since Eisenhower was president. It has survived every economic cycle the city has endured — the 1960s boom, the corporate consolidation of the 1990s, the 2008 crash, and the pandemic. Freed’s Bakery is one of the oldest continuously operating family businesses in Las Vegas, and for many valley residents, the brand is inseparable from the milestones it has marked: birthdays, graduations, weddings, and retirements baked into buttercream and fondant for over sixty-five years.
