Featherblade describes itself as a whole-animal butcher. Its assortment includes beef, pork, lamb and chicken, with dry-aged steaks, house-made sausages, burgers, bacon and pies among the specialties identified on its website. The business takes its name from an English term for a cut from the shoulder blade.
In his account on the shop’s site, Kirrane explains that he and his wife moved to Las Vegas to open a store focused on sourcing and customer service. KTNV independently identifies him as the owner in its reporting on meat costs, showing the practical side of the business: weighing cuts, preparing orders and dealing with changes in supply costs.
Knowing the supply line
The farm page explains how Featherblade chooses suppliers and works to keep those relationships consistent. Although the shop aims to source nearby where possible, it specifically notes that its supply network reaches into California, Colorado and Texas. The story is about knowing the farms, rather than suggesting everything comes from Nevada.
