Martin Kirrane: Old-World Whole-Animal Butchery on the Summerlin Corridor

Martin Kirrane is an English butcher who co-owned two shops in London before bringing old-world whole-animal butchery to Las Vegas. Featherblade Craft Butchery opened in June 2021 at 8550 West Charleston Boulevard, tucked into the retail stretch between Durango and the 215 that serves the Summerlin corridor’s western neighborhoods. The shop is the only whole-animal butchery in the Las Vegas Valley, which means every cut sold over the counter comes from animals that are sourced whole, broken down in-house by trained butchers using traditional methods, and merchandised nose-to-tail. That model is standard practice in the best British and European butcher shops but virtually nonexistent in the American West, where most retail meat operations receive boxed primals from distribution centers and never see the full carcass. Kirrane built Featherblade on the premise that the way an animal is raised, the way it is broken down, and the way it is sold are inseparable — and that Las Vegas deserved a shop where provenance, craft, and ethical sourcing were the baseline rather than the marketing pitch.

The case at Featherblade carries beef, pork, lamb, poultry, and specialty items, all sourced from producers who meet the shop’s standards for humane animal husbandry and sustainable farming practices. Because the butchers break down whole animals on-site, the shop offers cuts that most retail operations do not stock — secondary cuts, offal, bones for stock, and custom portions that a supermarket meat counter cannot produce. The staff works directly with customers to recommend cuts, suggest preparations, and explain the sourcing behind what they are buying. Featherblade has earned over 200 Yelp reviews since opening and has been featured in the Las Vegas Review-Journal — which ran the headline “Brit butcher marbles meat with tasty ethics” — and Las Vegas Weekly. The shop has quickly become the destination for chefs and serious home cooks in the valley who want responsibly sourced meat handled with genuine craft.

Featherblade Craft Butchery in the Las Vegas Valley

The Charleston and Durango corridor sits at the edge of Summerlin’s residential expansion, where the valley’s density gives way to newer master-planned communities and a population that increasingly prioritizes quality sourcing in its food purchases. Featherblade occupies a niche that no other butcher in the valley fills: whole-animal, craft-focused, ethically sourced, and operated by a butcher whose training comes from the British tradition rather than the American grocery chain pipeline. In a market where residents have access to excellent conventional butcher shops, Featherblade offers something categorically different — a shop built on the principle that knowing where your meat comes from and how it was handled is not a luxury but a standard.
