Brett Boyer and Brendon Wilharber's sourdough and pastry bakery near Sunset Park, using freshly milled organic grain; order ahead for set pickup days.
Desert Bread makes naturally fermented sourdough and laminated pastry from freshly milled, organic West Coast grain, with fruit and vegetables that change by the season. Brett Boyer and Brendon Wilharber run it, and it began the way many small Las Vegas bakeries do: in a home kitchen, with a line of neighbors outside.
From Oakland to a driveway in Paradise
The couple met at Lake Merritt in Oakland and married in 2015, working out recipes in a 50-square-foot kitchen. Boyer was a pastry chef at Bay Area kitchens including Chez Panisse, Boot & Shoe Service, Penrose & Sons and Oakland's Ramen Shop; Wilharber worked front of house. In 2016 they bought a house in Paradise near the airport as a weekend place. By 2018 they were selling sourdough and croissants at Las Vegas farmers markets, and in 2019 they moved to pop-ups in their own driveway. They left their Bay Area jobs in January 2020 to bake full time.
When the pandemic hit, they switched to delivering bread by hand, then brought back in-person pickups that summer. Eater Vegas reported that the Christmas line in 2020 stretched to Russell Road. Las Vegas Weekly readers voted Desert Bread the city's best bakery in 2021, describing a family-owned, solar-powered operation. The bakery's website also reports that Food & Wine picked it as the best sourdough in Nevada.
What shows up on the table
A pre-order menu posted in early 2025 gives a sense of the range:
- country and toasted sesame sourdough loaves
- a French butter croissant, a toasted almond bear claw, and a prosciutto and fontina croissant
- a spinach artichoke croissant tart and a Meyer lemon treccia
- orange and candied ginger scones, doughnut muffins and cookies
- whole orange cake and Meyer lemon meringue mini pies
Earlier favorites have included sticky buns, garlic focaccia and lemon cruffins, and Boyer often builds specials around what is growing in the backyard garden.
