Cold brew, start to finish

Cold brew is what Dark Moon Coffee Roasters is known for, and the Henderson shop on South Eastern Avenue roasts, brews and cans it under one roof. Owner Kyle Porterfield told Las Vegas Weekly the coffee is brewed with cold water and kept cold through storage and canning, using equipment that mists the grounds over about three hours to make a strong concentrate. Single-origin coffees rotate through the cafe's cold brew taps, still and nitro, and ready-to-drink cans are sold in the shop's fridge and at local Whole Foods and Sprouts stores.

Roasted on site

Beans are roasted in-house on a Loring S15 Falcon, which replaced an earlier Diedrich roaster, and the retail shelf usually carries six to ten single-origin bags, recently including Ethiopian, Costa Rican and Colombian lots. By the company's count it roasted more than 50,000 pounds in 2023. After roasting, coffee is vacuum-sealed and deep-frozen, which lets the cafe serve every coffee as single-origin espresso or pour-over. Beans are also sold online, by monthly subscription and to wholesale accounts.

A Henderson native's shop

Porterfield was born and raised in Henderson, studied at UNLV's Lee Business School and spent more than eight years in hospitality at the Wynn Las Vegas before starting Dark Moon, a family-owned business that opened its doors in 2019. It has done more than 20 coffee collaborations with breweries and other local businesses, including Las Vegas Distillery's coffee liqueur, which is made with Dark Moon cold brew. The shop says Food & Wine named it Nevada's best coffee shop in 2022.
