From Home Roaster to Four Cafes

Jerad Jay left a career in technology to pursue a fixation that had taken over his kitchen. Working with a small drum roaster in a downtown Las Vegas apartment, he taught himself the mechanics of sourcing, profiling, and pulling shots — then looked around and realized the city had almost no specialty coffee culture to speak of. In 2016, Jay opened the first Vesta Coffee Roasters location in the Arts District at 1114 South Casino Center Boulevard, betting that a city of two million residents deserved more than drive-through chains and casino floor espresso.

The bet paid off quickly. Vesta Coffee Roasters now operates four cafes across the valley, including a location inside the Durango Casino & Resort — a placement that puts a small-batch roaster inside a major gaming property, a pairing that would have been unthinkable a decade ago. The roasting operation remains centralized in the Arts District, where Jay’s team processes single-origin and blended coffees for all four locations and a growing wholesale channel. Vesta’s bakery program runs at roughly 98 percent scratch-made, producing pastries, breads, and seasonal items that have become as much a draw as the coffee itself.

National Distribution, Local Roots

Vesta Coffee Roasters has pushed beyond the Las Vegas metro into national retail. Whole Foods Market and Sprouts Farmers Market both carry Vesta beans, giving a Las Vegas roaster shelf space alongside established coastal brands. The wholesale program supplies restaurants, hotels, and offices across Southern Nevada, but the national grocery presence is what separates Vesta from most regional roasters — it signals a production capacity and consistency that few small-batch operations achieve within their first decade.

Jay has built the company without outside investors, scaling through reinvestment and organic demand rather than venture capital. The team has grown from a solo roasting operation to a multi-location employer, and the Arts District flagship remains the anchor — both operationally, as the roasting hub, and culturally, as the cafe most closely identified with the neighborhood’s creative identity.

Vesta Coffee Roasters in the Las Vegas Valley

The Arts District corridor along South Main Street and Casino Center Boulevard has attracted coffee roasters, galleries, and independent retailers over the past several years, and Vesta Coffee Roasters was among the earliest specialty tenants to plant a flag there. The flagship sits within walking distance of the 18b Arts District’s monthly First Friday events, which draw thousands of residents downtown and have become one of the valley’s most reliable foot-traffic generators for independent businesses. Vesta’s expansion to Durango Resort in the southwest valley — roughly twenty miles from the original location — reflects a pattern common among Las Vegas food and beverage operators: proving the concept downtown, then following rooftops into the suburbs.
