Fox Smokehouse BBQ

Dan and Kelly Fox compete on the Kansas City Barbecue Society circuit under the team name BBQ Junkie, and over the years they have brought home trophies and prize money. Fox Smokehouse BBQ is where they put that competition cooking on a plate for their own town: a little barbecue joint, as they call it, on Nevada Way in Boulder City, about half an hour from Las Vegas. The meat is smoked over hickory, and the trademarked house motto is If you're saucin', you're hidin'.

From the smoker

Build a plate by the half pound, three-quarter pound or more, mixing burnt ends, brisket, tri-tip, pulled pork, St. Louis ribs, sausage, turkey and chicken. Baby back and St. Louis racks come half or full. Flintstones-style beef ribs are smoked Thursday through Sunday and can be special-ordered on other days with 24 hours' notice. After 3 p.m. the kitchen also cuts a 14-ounce smoked prime rib to order.

Worth ordering

• Cowboy beans, which AAA's Via magazine called a must for the scraps of smoked meat in them
• The BBQ Sundae: cowboy beans, coleslaw, mac and cheese and mashed potatoes with gravy, layered in one bowl under cheddar and Texas toast
• The Sloppy Fox, two brisket burger patties piled with pulled pork, bacon, cheese, a fried pickle and slaw
• Sides like collard greens, creamy spinach, okra and potato salad

Feeding a crowd

Family feasts serve five to seven or eight to ten people with racks of ribs, meat by the pound, large sides and bread, and there is a separate catering menu. The weekly specials cover tacos and beer buckets on Tuesday, prime rib on Wednesday, ribs on Thursday and salmon on Friday. Happy hour is every day from 2 to 5 p.m. at the full bar, and a kids menu covers diners 12 and under.

To take the flavor home, the restaurant sells its mild and spicy sauces and three dry rubs (brisket and pork, chicken and rib, and a fry salt), and it will ship the rubs within the U.S.

Hours: Sunday to Thursday, 11 a.m. to 8 p.m.; Friday and Saturday, 11 a.m. to 9 p.m.
