## Thai cooking after a career on the Strip

Paul Meesawat brought experience from Las Vegas hotel kitchens back to the food he grew up with. The chef and owner of What’s Zaap? Thai Food was raised in Thailand, moved to Las Vegas in 2000 and later graduated from Le Cordon Bleu. His restaurant now serves the southwest valley from 9575 West Tropicana Avenue, Suite 1.

Before opening the restaurant, Meesawat worked at Fleur de Lys and Caesars Palace. The restaurant’s own account describes What’s Zaap as a return to his Thai roots, with recipes informed by the kitchens and markets of his childhood. Curry paste is made in-house. The kitchen presents its cooking as scratch-made, with adjustable spice levels and a menu extending from noodles and fried rice to soups, salads and curries.
