At Milpa, the tortillas start at the molino. When the Nevada Independent visited in 2021, DJ Flores was loading cooked yellow or blue Oaxacan corn into an electric stone mill at 7 a.m., salting the fresh masa, and pressing it into the day's tortillas by hand. No bagged Maseca flour goes into them, and that corn is the backbone of the menu.

## A chef who went out on his own

Flores is a Las Vegas native whose parents came from Puebla, Mexico, and ran businesses of their own. He was chef de cuisine at a Strip restaurant from its 2017 opening until late 2020, when he caught COVID-19 and lost the job soon after returning. With help from friends, family and fellow chefs, he opened Milpa on South Durango Drive in January 2021. The name comes from the Mesoamerican practice of planting corn, beans and squash together so each supports the others. A 2016 internship at Quintonil in Mexico City shaped how he thinks about whole ingredients. The restaurant's website now bills it as James Beard nominated.

## On the menu

The kitchen leans on vegetables and grains, with meat as an option. A fall 2025 menu included:

- Blue corn pinole pancakes, now gluten free, with berry compote and piloncillo syrup
- Blue corn masa tetelas filled with squash or black beans, served with two eggs
- The Milpa grain bowl with roasted corn, cauliflower, lentils, apples, cashews and quinoa
- Oyster mushroom carnitas tacos made with mushrooms from Desert Moon Farms, plus ribeye asada, barbacoa and birria queso tacos
- Cafe de olla and Oaxacan chocolate lattes and horchata cold brew

There is a kids menu too. A take-home counter the restaurant calls Molino To-Go sells tortillas by the dozen and stone-ground heirloom masa by the pound, and a taco bar for 10 covers office lunches and parties. You can order through the website for pickup.
