## Start with the short rib fried rice

Le Thai calls its short rib fried rice one of its most famous dishes: beef pulled from short ribs, stir-fried with egg, garlic, onions and cilantro and the house waterfall sauce. The other plate the restaurant hangs its name on is the 3 Color Curry, red, yellow and green curries blended together with all their vegetables.

A few more from the menu:

- Thai oxtail and meatball noodle soup
- Papaya salad and larb, served with sticky rice or lettuce for wrapping
- Pad Thai, pad see ew and drunken noodles (pad kee mow)
- Tom yum and tom kha soups
- A daily and weekly specials board

### The chef

Chef Dan Coughlin’s mother and grandmother were born in Thailand, and he grew up in his mother’s restaurant. The traditional side of the menu comes from their cooking; the fusion dishes are his own. He opened the Fremont Street restaurant on November 1, 2011, at a time when, as he told Travel Nevada, downtown was still fairly bare.

### Downtown or west on Charleston

Le Thai Downtown sits on East Fremont, with a patio facing the street, a remodeled dining room in back and a full bar. Reservations are taken through Resy, and the restaurant books buyouts, birthdays and company events through its website.

Le Thai 2 is in Rancho Plaza in the Medical District, a few minutes’ walk from UMC. Coughlin bought his first restaurant space in that plaza in 2006 and came back in 2018 to open a takeout-focused second location. A remodel has since given it a 40-seat dining room and a 14-seat bar, with happy hour Monday through Saturday from 3 to 6 p.m. and Sunday from 4 to 6 p.m.

**Downtown hours:** Mon–Thu 11 a.m.–10 p.m., Fri 11 a.m.–11 p.m., Sat noon–11 p.m., Sun 4–10 p.m.
**Le Thai 2 hours:** Mon–Fri 11 a.m.–9 p.m., Sat noon–9 p.m., Sun 4–9 p.m. Both close Christmas Eve, Christmas Day and New Year’s Day.
