## She fed the flight crew first

Before she cooked for Las Vegas parties, Maggie Reb was a flight attendant who made meals for her fellow crew members on transatlantic flights. She told Desert Companion in 2017 that pilots were supposed to eat different food from each other in case of food poisoning, but when she was on board, they all ate hers.

Her cooking comes from home. Born in eastern France and raised in the countryside south of Paris and on the Île de Ré, an island off the Atlantic coast, she learned mostly from her mother and grandmother, starting with galettes (savory crêpes) and sweet crêpes. After business school in Paris and her years flying, she spent five years at two hotels and restaurants in Les Baux-de-Provence before moving to Las Vegas.

## From crêperie to catering

Getting started here took patience. Landlords wouldn't lease to her without a visa, and she couldn't get a visa without a lease, so it took two years to land a space. La Maison de Maggie opened on South Durango Drive in 2015, using flours imported from France, and she turned down requests for crêpe burritos and fried crêpes. “I don't want to lose my authenticity,” she said. Her website lists a Best of Las Vegas win for best French restaurant and a No. 44 spot on Yelp's national Top 100. The Durango crêperie has since closed, and she now cooks for events through L'Académie de Maggie.

### Events she caters

- Office meetings, grand openings and corporate dinners
- Birthdays and showers
- Weddings and rehearsal dinners, with table decoration if needed

Clients plan the menu with Maggie and her team, choosing an hors d'oeuvre, side, main dish and dessert from seasonal offerings, delivered to a home, office or event venue.

### Jars of jam

She also makes jam from family recipes brought from France. Most of the fruit comes from Gilcrease Orchard in North Las Vegas, where it is picked by hand, and the only thing added is organic raw sugar, about one part to three parts fruit. Flavors include strawberry basil, apricot lavender, pluot rosemary, peach mint, pear cinnamon, cherry lemon and seedless raspberry violet.

**Hours:** seven days a week, 8 a.m. to 5 p.m.
