## A station in the village

Blue Diamond is a small village on the edge of Red Rock Canyon, about 30 minutes from the Strip, and Cottonwood Station is its cafe. The name joins the town’s original name, Cottonwood Springs, with its old role as a stopping point, a station, along the Old Spanish Trail. The town became Blue Diamond in the 1920s, after the Blue Diamond Company bought a gypsum mine nearby.

Steve Enger and Jody Lyman, a married couple, built the cafe and opened it in 2018. In November 2024 they handed it to Brian Fisher, a mountain biker of more than 35 years who had ridden the area since 2010, watched the building go up and ate there often. Fisher and his wife, Oulay, also run Calabash African Kitchen, the Senegambian restaurant she founded in 2022.

## From the scratch kitchen

Breakfast runs until 11 a.m., breakfast toasts until noon, and pizza and baked goods all day. A few things from the current menu:

- **Mornings:** breakfast burritos, a Sunrise Bowl with potatoes, eggs and pico, a breakfast panini and a breakfast pizza
- **Pizzas:** 12-inch pies on thin, artisan sourdough or gluten-free crust, from margherita to pork belly with fig ricotta
- **Sandwiches:** a smash burger, the Cowboy Short Rib on sourdough batard, the Trailhead Tuna and a grilled cheese called the Killer Griller
- **Salads:** roasted beets with goat cheese, or charred broccoli in spicy peanut sauce

Vegetarian, vegan and select gluten-free choices are marked throughout. The coffee is locally roasted, craft beer is on tap, and pastries are baked in-house every day.

### The patio

Indoor tables and a dog-friendly patio both look out over the village and the mountains. Cold days bring a heated bench, a fire pit and heaters; hot ones bring misting fans. One seating area sits in the flatbed of an old mining truck. At about 3,700 feet, the cafe says it usually runs around 10 degrees cooler than the Strip.

**Hours:** Tuesday, 8 a.m. to 5 p.m.; Wednesday through Friday, 8 a.m. to 7 p.m.; Saturday and Sunday, 7 a.m. to 7 p.m.; closed Monday. Happy hour runs from 4 p.m. to close Tuesday through Friday, with 25 percent off alcoholic drinks. The cafe also caters and hosts parties and office get-togethers.
