Burgundy French Bakery & Cafe fills a 1,800-square-foot corner space in Village Square, the shopping center at West Sahara Avenue and Fort Apache Road. Inside are street signs from Chablis, the Burgundy town the owners call home, French newspapers from the 1890s set into the tabletops, and vintage French advertising posters on the walls. Audrey and Florent Cheveau opened it in November 2020, and there is seating inside and on a patio.

## From the Strip to Sahara

Florent Cheveau was born and raised in France and moved to Las Vegas in 2007 to work with pastry chef Jean-Philippe Maury, starting at Jean-Philippe Patisserie in Bellagio and later serving as assistant executive pastry chef at Aria. In 2015 he became executive pastry chef at MGM Grand. After winning the U.S. Chocolate Masters, he represented the United States at the 2018 World Chocolate Masters in France, where the bakery's website says he placed third overall and first in the tasting. Audrey Cheveau is co-founder and general manager, and Florent is executive chef.

## What comes out of the kitchen

The menu is billed as made fresh daily and runs from breakfast through dessert:

- Croissants plain, chocolate and almond, cheese Danish, beignets, apple turnovers and pistachio chocolate rolls
- Omelettes, a spinach-feta frittata, a salmon bagel and savory Danish
- Croque monsieur and croque madame, quiche Lorraine, and croissant sandwiches such as chicken, brie and caramelized onion
- Sourdough flatbreads and savory or sweet crepes
- Chocolate and lemon meringue tarts, Napoleons, eclairs, flan, and on weekends only an opera cake
- Macarons in flavors such as pistachio, blueberry lavender and mango passion fruit

The coffee bar pours espresso drinks, cold brew, chai and matcha lattes. For offices and parties there is a catering list of mini croissants, mini quiches and petite versions of the pastry case, which needs 72 hours' notice. Free Wi-Fi is available; ask the staff for the password.
